Monday Meditative Thought – Healing to Revelation

This week we focus on one of the definitions of humility which is to be teachable. 

Sometimes through sickness, heartache, and pain, true transformation happens.  In my experience, some of my greatest revelations have appeared to me when I was experiencing some type of ‘dis-ease.’  The times I laid in bed, body feeling weak, with a slight fever, I could have asked, “God why me?” But I have learned to ask, “What is it you want me to learn from this experience?”  From that point, other questions can be asked, “What’s to be revealed during this time?”  What am I willing to release during this experience?  As Earnest Holmes has written, “There is nothing to heal, only to reveal.”  Our approach to our challenges is key; if we are willing and open to new Ah-Hah moments to take place, they will.  My mother always says, “What doesn’t kill us make us stronger.”  That is only true if we invite revelations through our healings.  And then we can truly know the meaning of “nothing to heal only to insight to be revealed.” 

Vegan Recipe Corner – Vegan Stew

Vegan StewThis week we whipped up a vegan stew that we prep here. The ingredients are simple and straight forward; onions, carrots, potatoes, parsnip and turnips. You can also substitute your own veggies too. Have a terrific weekend.

INGREDIENTS
1 onion, chopped
3 carrots, chopped
3 potatoes, chopped
1 parsnip, chopped
1 turnip, chopped
1/4 cup uncooked white rice
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon salt
2 1/2 cups water

PREPARATION
1. In a large pot over medium-high heat, combine onion, carrots, potatoes, parsnip, turnip, rice, pepper, cumin, salt and water.

2. Boil until vegetables are tender, about 30 minutes, adding more water if necessary.

3. Serve and eat

This Week’s Health & Fitness Tip – The Art of Stretching…

The Art of Flexibility and Stretching…
It’s important that everyone remembers to stretch and work on their muscles before and after a workout, no matter the intensity. Stretching helps get your muscles the shape that they wish to take and helps them recuperate after a long day. Your body feels so much better after a good stretch.

It’s important that when stretching your body, you stretch each portion of your body anywhere between 10-30 seconds. Any longer and you may hurt yourself, any shorter and you’re not allowing your body to fully stretch.

Pay attention to what your body is saying. Whenever you stretch, workout or do anything that requires movement you need to pay attention to how it feels. Making sure your body is in good working order is important and can make a difference when it comes to injuries and preventing them. Be mindful of the stretch, as Skip always says, and make sure that you’re breathing with your body and paying attention.

Vegan Recipe Corner – Ginger Veggie Stir-fry

This week the team has whipped up a yummy Ginger Veggie Stir-Fry. It’s quick, easy and delicious and although Vegan, it’s completely open to modify with the protein of your choice.

INGREDIENTS

1 tablespoon cornstarch1 1/2 cloves garlic, crushed2 teaspoons chopped fresh ginger root,divided1/4 cup vegetable oil, divided

1 small head broccoli, cut into florets

1/2 cup snow peas

3/4 cup julienned carrots1/2 cup halved green beans2 tablespoons soy sauce2 1/2 tablespoons water1/4 cup chopped onion

1/2 tablespoon salt

 

PREPARATION

1. In a large bowl, blend cornstarch, garlic, 1 teaspoon ginger, and 2 tablespoons vegetable oil until cornstarch is dissolved. Mix in broccoli, snow peas, carrots, and green beans, tossing to lightly coat.

2. Heat remaining 2 tablespoons oil in a large skillet or wok over medium heat. Cook vegetables in oil for 2 minutes, stirring constantly to prevent burning. Stir in soy sauce and water. Mix in onion, salt, and remaining 1 teaspoon ginger. Cook until vegetables are tender but still crisp.
