Vegan Recipe Corner – Spicy Eggplant Caponata

Today’s recipe we continue the theme on “Spicy” with eggplant as our star veggie. As always it can be strictly Vegan or you can add your choice of proteins too. Let us know what you think or better yet, send us your photos enjoying your creation!

Spicy Eggplant Caponata

INGREDIENTS

  • 1 1/2 pounds eggplant (1 large)
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 ribs celery, inner stalks, diced
  • 1 teaspoon crushed red pepper flakes
  • 1½ cups Pomi chopped tomatoes
  • ¼ cup red wine vinegar (make sure your vinegar is gluten-free if you are gluten-sensitive)
  • 1 tablespoon sugar
  • Pinch cinnamon
  • ½ teaspoon fresh thyme (optional but good)
  • 2 tablespoons capers, rinsed and drained
  • 8 chopped pitted kalamata olives
  • ¼ cup minced roasted red peppers (optional)
  • 3 tablespoons pine nuts, lightly toasted
  • 3 tablespoons golden raisins, roughly chopped
  • 2 tablespoons chopped flat-leaf parsley
  • 1 teaspoon finely minced garlic
  • Salt and freshly ground pepper to taste

PREPARATION

  1. Preheat the oven to 400 degrees.
  2. Cut the eggplant in half lengthwise and score once or twice with a knife (not hitting the skin.) Roast face down on a baking sheet, covered in foil and sprayed with oil, until tender – about 20 minutes. Let drain in a colander for 10 minutes, cut side down. Scoop the eggplant out of the skin and chop coarsely.
  3. Heat 2 tablespoons oil over medium heat in a large, heavy skillet. Add the onion, celery and red pepper flakes and cook for 5 minutes. Add the tomatoes, vinegar, cinnamon and sugar and cook for 5 minutes more. Add the remaining oil, eggplant, capers, red peppers, olives, pine nuts, raisins and parsley and cook for 5 minutes more. Add garlic. Season to taste. Cool to room temperature.

Monday’s Meditative Thought:

As we start our week, I would like to focus on one of the definitions of humility which is to be teachable. When we remain humble, the Universe will teach us everything we need to know. In every situation we can expand our consciousness and awaken divine knowledge that is within us.  As a spiritual counselor, it is fulfilling to help someone activate personal growth. But the truth is we all have our own guides within ourselves.   Your greatest teacher is you. When we do the spiritual work of meditation, prayer, study, fellowship, and service, we strengthen our relationship with God, which opens our teachable space.  The knowledge of the Universe is within; it just needs to be cultivated.  Any decision or question that needs an answer has a direct connection to your personal guide. It’s like having your own “Bat Phone.” Have faith in your own revelations. Trust that the Universe within you speaks words of guidance and love.  Stay open and set the intention to learn something new everyday.

Monday Meditative Thought – Pushing Restart

Monday Meditative Thought: I hope that everyone had a little rest and relaxation over Mother’s Day weekend. Sometimes, especially at the beginning of a week we just need to push restart. On those days the activities of our life can be so challenging that it feels like a downward spiral. These are the times we get to do what I call a “spiritual do-over.” We can always push the restart button and begin again.  When we are faced with difficulty, we can go to the secret place within our hearts and simply breathe. By stopping and taking a moment to be still, we will find the peace that seems to elude us. Our restart always begins by turning to God.  By pushing the restart button we will know inner peace and serenity and our day will be brand new.

Vegan Recipe Corner – Thai Green Curry

Thai Green Curry!

Who doesn’t like Thai food? This recipe brought by my friends at PETA, brings all of the wonderful and aromatic Thai flavors such as lemon grass, ginger, coriander, red & green peppers and more. You can substitute fennel and more red shallots if you don’t want to use cumin seeds. Most Thais would go that route. Let us know what you think.

2 Tbsp. chopped lemon grass
1 tsp. cumin seeds
1 Tbsp. grated galangal (baby ginger)
1 Tbsp. chopped coriander root
4 garlic cloves
10 green Thai peppers or 4 green Indian chilies
2 Tbsp. groundnut oil
1/2 cup chopped red pepper
1/2 cup chopped green pepper
1 cup chopped button or shiitake mushrooms
1 cup okra
1 cup chopped snow peas, parboiled
1 cup chopped carrots, parboiled
1 cup chopped broccoli, parboiled
1 cup chopped tofu
Salt, to taste
3 Tbsp. coconut milk
3 Tbsp. sugar
1 cup water
6 fresh lime leaves
15 fresh Thai basil leaves

• In a food processor, grind the lemon grass, cumin seeds, galangal, coriander root, garlic cloves, and Thai peppers or Indian chilies into a smooth paste.
• Heat the oil and sauté the peppers, mushrooms, and okra.
• Add the snow peas, carrots, broccoli, and tofu and stir for a couple of minutes.
• Add the salt, coconut milk, sugar, and lemon grass paste.
• Add the water and bring to a boil.
• Add the lime leaves and basil leaves. Serve hot with steamed rice.

Today is not just any other Sunday. It’s also Star Wars Day. I’m a big Star Wars Fan and although maybe not an official holiday it’s a day to celebrate lightsabers, Luk and Obi-Wan Kenobi. I’m getting ready to celebrate with my recent purchase of the complete six disc BlueRay Star Wars Saga. Who’s your favorite Star Wars Character?
