The Shift Radio Guest Kristina Tester

Kristina Tester is Skip’s guest on #TheShiftWithSkip

A 2014 graduate of Harvard University, with degrees in African and Global Health, Kristina Tester is the founder and executive director of So Others May Learn, a non-profit organization based in Zimbabwe and Uganda. So Others May Learn is dedicated to providing bright and motivated students in sub-Saharan Africa with the opportunity to further their educations through comprehensive scholarships that support them through their four years of secondary school.

Currently, Kristina works as a program coordinator and research assistant for the Division of Global Health and Human Rights at Massachusetts General Hospital. While at Harvard, Kristina worked as the student director for one of the Division’s programs, the Initiative to End Childhood Malnutrition (IECM). Based in Rukungiri, Uganda, IECM provides comprehensive inpatient and out-patient care to children suffering from moderate and severe malnutrition.

In addition, Kristina traveled to Uganda and has worked with Uganda’s Ministry of Health to coordinate village health teams that could more effectively reach rural communities. Her senior thesis, titled “Increasing the Effectiveness of Healthcare Delivery to Rural Areas: A Case Study of Village Health Teams and Childhood Malnutrition in Rukungiri District, Uganda”, was awarded the Harvard Hoopes Prize for outstanding research and scholarly work, and she was the recipient of the Phillipe Wamba Prize for highest achievement in her Division. Kristina is planning to begin medical school in the fall of 2016 and hopes to combine her medical degree with a Masters in Public Health. She is committed to continuing her efforts to provide education and medical services to underserved communities at home and abroad.

The Lotus Kitchen-Cucumber Mint Salad

You will absolutely love the Lotus Kitchen – Cucumber Mint Salad. It’s so refreshing in so many ways, from a main dish on a warm day, to a light palette refresher.  This recipe and more is from my collection of vegan recipes from my upcoming book, the Lotus Kitchen with co-author Gwen Keannelly that combines good vegan eats with a yoga practice.

Ingredients:

4 cups chopped cucumber (3 medium sized cucumbers)
2 cups fresh mint leaves, de-stemmed
1 cup fresh cilantro, de-stemmed
1 cup lime juice
1/3 cup grape seed oil
1 cup fresh yellow cherry tomatoes
Raw macadamia nuts, chopped
Fresh basil

Combine all ingredients in a large bowl and serve. Serves 4

The Practice: The cucumber is the most perfect food for hydration, nutrients and releasing weight. The practice of yoga also helps release weight and unwanted heavy energy. One of the effects of yoga is building heat within, and allowing the body to sweat out everything we do not need. To balance the body, take the time to hydrate with water and cucumbers.

Mindful Eating Practice: This practice is to be aware that the salad is hydrating, nurturing, and creating a healthy body. With each bite be aware of the water of the cucumber that is hydrating the body. Be mindful of each quenching morsel that is blessing your mouth. Feel the energy that the salad is stimulating within the body. The vibration that is delivered from the food is helping to elevate the vibration of the soul. During the ritual create an affirmation that helps remind you that eating is a practice. For example, “I know my mind, body, and spirit are strong as I eat my cucumber salad.”

THE WORLD PEACE CARAVAN

WORLD PEACE AND HEALTH CONFERENCE, CONCERT AND YOUTH COMMUNITY

DECEMBER 15- 26, 2015

World Peace. A dream so big it hardly seems achievable. With wars raging constantly around the globe, we need a voice for peace so loud it can drown out the guns. The World Peace Caravan believes that voice can come from our youth.  Beginning December 15, 2015, the caravan will embark by camel, horse, and foot from Petra, Jordan on a 12-day journey for peace. It will be anchored by two landmark events, the World Peace and Health Conference at the King Hussein Bin Talal Convention Centre on the shore of the Dead Sea in Jordan on December 21 and 22, 2015 and the blockbuster Concert for Peace, which will celebrate the end of the caravan in Jerusalem on December 26, 2015. The caravan will create a delegation of young people from around the globe to begin an important conversation about the future that these youth have the power to create.

The WORLD PEACE CARAVAN is founded by the international D. Gary Young Foundation, a 501 © (3) non-profit organization. The foundation is looking for like-minded partners who share in the vision of a world at peace.

International yoga teacher Stephen Ewashkiw is my guest on the ShiftWithSkip radio podcast. Stephen has taught almost everywhere — from Canada, Italy, Sweden to China, Russia, Indonesia and more. He strives to bring the joy of the practice to his students and his classes are a fun, challenging blend of Hatha yoga, alignment, meditation, and Tantric philosophy. Stephen believes a yoga class should involve laughing, learning, and sharing, coupled with the other benefits of yoga – a really incredible workout, getting fit, learning about yourself, being healthy.  In 2013 Stephen and his wife Jane decided to take a few months off and travel the world on their bikes and after 16 months of travel, visited 22 countries, and covering 10,000 miles all on bicycles.

Welcome Autumn

AutumnWelcome to Autumn! For me one Fall is one of the loveliest times of the year. I enjoy it because it’s the gateway to the the holiday season with it’s symbolism of crisp Fall evenings, and the changing of the leaves. Tis the season of pumpkin latte’s, raking leaves, costumes, pilgrims and thanksgiving season, I want you all to go out and embrace the season. Take photos! Loads of them of the moments you spend with your loved ones. Let’s cherish what we have and Love and be loved!

Monday Meditative Thought – Be Still and Know

As we begin a new week, we’ll start our meditation by focusing around the theme of Being Still and Knowing God’s voice.  So let’s begin by taking a deep breath and by being still and know that God wants to have a private encounter with you on a daily basis. Know that it is by the practice of meditation that He helps you to embrace your greatness.  When we choose the path of stillness we will know the power that sustains us.

This week’s Meditative Action Plan:  All this week meditate to be still and know that God is God.  It is through the stillness that brings a deeper awareness of our unity with the Holy Spirit.  Take the time to sit in the secret garden of your consciousness.
